Ingredients:


For dough:
1.1 LB flour
1 tbsp dry yeast
1/2 tsp Anis seeds
1/2 tsp fennel seeds
1 cup water
1 tsp sugar
1 tsp salt
5 tbsp oil
1 tsp cumin seeds
1 beaten egg

For filling:
1/2 LB ground beef
2 chopped onions
1 tsp cumin seeds
1 cup chopped cilantro
1 tsp salt
1/2 tsp black pepper


Directions:


Dough:
Mix all dough ingredients and kneed in a mixer for 8 minutes to get a smooth dough
Cover with plastic wrap for about an hour until doubles in volume

Filling:
Mix the onion with the salt and let it rest for 1/2 hour until liquids are drained
Squeeze the onion and put it in a large bowl
Add the rest of the filling ingredients and mix

Press on the dough to let the air out and roll on a floured surface to a thickness of about 1/8 of an inch
Cut circles about 3 inches in diameter
Put a large tsp of filling on the center of the circle
Wet the edges of the circle and pull them up to create a small sac and pinch to close
Cover a baking pan with baking sheet
Lay the sac upside down on the pan
Cover the pan loosely with a plastic sheet and let it rise for 20 minuts
Heat oven to 390 F
Brush the pockets with beaten egg and sprinkle cumin seeds on top
Bake for about 30 minutes until golden
