Ingredients:


Dough:
4 cups flour
6 oz butter
4 tbsp canola oil
1 tsp salt
¾ cup water

Filling:
8 oz ricotta cheese
2 oz shredded feta cheese
2 oz shredded mozzarella cheese
1 boiled potato pasted to puree
1 beaten egg
½ tsp salt
½ tsp black pepper


Directions:


Preheat oven to 400F
Boil the water
Add butter, oil and salt, mix well and let cool down to be just warm
Add the flour and kneed to get smooth dough
Mix the filling ingredients except the egg
Roll the dough with a roller to ¼ inch thick
Cut circles about 2-3 inches diameter
Put about 1 tbsp of filling in the circle center
Fold over to get half a circle
Pinch the edges to seal
Brush with egg
Bake about half hour or until golden
