* 5 cups cooked brown rice
* 1 cup chopped scallions
* 1 large carrot, grated
* ½ cup chopped fresh parsley
* 1½ cups coarsely chopped walnuts
* Salt and black pepper to taste
* 1 large apple, peeled
Lemon Dressing:
* ½ cup oil
* ¹/3 cup lemon juice
* 2 tbsp honey
* 1 tbsp mayonnaise
* 1-3 tsp curry powder, to taste
* 2 cloves garlic
* Salt and black pepper to taste
Directions:
Combine the rice, scallions, carrot, chopped parsley, and chopped nuts, Add the salt and pepper to taste. Toss to blend the ingredients. Set aside the apple.
In a blender jar, combine the Lemon Dressing ingredients. Blend until smooth. Dice the peeled apple into the dressing. Pour the dressing over the rice mixture. Mix well and serve.
