Ingredients:


3 eggplants
1 cup chopped green pepper
1 cup chopped celery
1 cup chopped onion
1/2 cup chopped parsley
4 minced garlic cloves
1 tsp dry thyme
1 tsp dry oregano
1 tsp dry basil
1 tbsp Cajun

for crumbs mix;
4 oz bread crumbs
2 oz grated parmesan
1/2 tbsp Cajun spice


Directions:


Wrap eggplants in aluminum wrap and bake for an hour in oven at 400F
Let them cool down, peel and cut to cubes
Start to fry the green pepper, then add the celery, then the onion
Add parsley and garlic
Add the spices and cook for a few minutes
Add the eggplants, mix and then turn off heat
Add a cup of crumb mix and mix well
Move content to a baking pan and sprinkle the rest of crumbs over
Bake for half hour at 400F
