Ingredients:


· 2 cups flour

· 2 cups cornmeal

· 2 Tbs. and 2 tsp. baking powder

· 6 Tbs. sugar

· 1½ tsp. salt

· 2 cups milk

· 4 eggs, beaten

· 1/2 cup canola oil


Directions:


1. Heat oven to 425°F.

2. Lightly grease two 8-inch square baking pans.

3. In a large bowl, blend well all the dry ingredients.

4. In a medium bowl, beat together milk, eggs and oil.

5. Make a well in the dry ingredients, add liquid ingredients and stir together.

6. Blending well but not over-stirring (mix may be slightly lumpy).

7. Divide batter equally between the two prepared baking pans.

8. Bake for 20-25 minutes, until tops are nicely browned.

9. Remove from oven and cool for at least 10 minutes before cutting into squares to serve.
