Ingredients:
· 1 lb. boneless, skinless chicken breasts, cut into ½" strips
· 3 Tbs. Olive oil, divided
· 1 tsp. salt
· ½ tsp. paprika
· ¼ tsp. black pepper
· 1 medium onion, sliced
· 1 Tbs. cornstarch
· ½ tsp. ground ginger
· ¼ tsp. ground nutmeg preferably fresh
· 1 cup orange juice
· ¼ cup honey
· ½ cup ripe pitted olives, halved
· Hot cooked linguine

Directions:
1. In a large skillet, saute chicken in 2 Tbs. olive oil until juices run clear.
2. Sprinkle with salt, paprika and pepper.
3. Remove from pan and keep warm.
4. In the same pan, saute the onion in remaining 1 Tbs. olive oil until tender.
5. In a small bowl, combine the cornstarch, ginger, nutmeg, orange juice and honey.
6. Pour over onion.
7. Bring to a boil.
8. Cook and stir for 2 minutes or until thickened.
9. Add olives and chicken.
10. Simmer, uncovered, for 5 minutes or until chicken is heated through.
