Ingredients:


1 pound beef cubes
4 onions
2 garlic cloves
4 crushed tomatoes
2 eggplants
1 tbsp tomato paste
1/2 cup fresh lemon juice
1 tbsp sugar
2 tsp salt or to taste
1 tsp black pepper
Olive oil


Directions:


Cut the eggplants to 1 inch size cubes, or slice them
Sprikle some kosher salt and leave it in sunlight
Remove salt and absorb all liquids
Slice the onions to rings and fry until golden
Add the beef and brown surface only
Add pepper, salt and garlic and stir for a couple of minutes
Add the tomato, tomato paste, lemon juice and sugar and stir for a couple of minutes
Add water to cover content, bring to boil and lower heat
In a separate pan fry the eggplant until golden
Add the eggplant to the stew, do not mix
Cook on low heat for 1 1/2 hours
Serve with rice
