Ingredients:


2 pound okra
5 grated tomatoes
1 chopped onion
5 chopped garlic cloves
½ cup of chopped mint leaves
Juice from 1 lemon
½ chopped hot pepper or to taste
½ tsp ground cumin
1 tbsp paprika
4 tbsp olive oil
Salt
Pepper


Directions:


Fry lightly the okra in 2 tbsp oil
Remove okra and put aside
Add 2 tbsp oil and fry the onion, the garlic and the hot pepper until light golden
Add the rest of the ingredients except the okra and bring to boil
Add the okra and hot water if needed so the liquids cover the rest and cook for 30 minutes

Serve as a side dish or as a topping for rice.
