Ingredients:


1 lb ground beef
2 lb chopped leek
½ cup chopped parsley
4 eggs
4 tbsp bread crumbs or matso meal
½ tsp black pepper
2 tsp salt
Oil


Directions:


Cut the root off
Cut about ¼ of the top leaves, if too dry cut 1/3 and discard
Slice the leek along in the middle and then cut into 1 inch pieces
Soak in water and spread the layer and shake in water to clean off any dirt
Let it rest for a few minutes until all dirt sinks and then pick the leek pieces and move to a pot
Cover with water bring to boil and simmer for 15 minutes
Drain and squeeze extra water
Chop coarsely either with knife or with food processor
Mix all ingredients well
Make small hamburgers about 2 inch or smaller if you wish and about ½ inch thick
Fry in oil and serve
