4 eggs
1 onion
½ cup chopped cilantro
½ cup chopped parsley
½ cup chopped dill
1 tsp ground coriander
¼ tsp salt
¼ tsp black pepper
Directions:
Chop the onion and fry it in a pan.
In a large bowl mix everything except the fried onion.
Heat oil in a large pan.
Add the fried onion, mix well and pour into the pan.
Cover and cook in medium heat first and then lower the heat and let it cook until the top side is done. You may also flip the omelet and brown the top side as well.
