Ingredients:


6 chicken thighs
1 cup rice
1 chopped onion
3 sliced carrots
3 tbsp tomato paste
2 tbsp olive oil
4 tbsp lemon juice preferred fresh
1 tsp salt


Directions:


In a pot fry the onion in the oil so it is brown all over the surface
Add the carrot and 3 cups of water and bring to boil
Add the rest of the ingredients except the rice and cook in medium heat for 15 minutes
Add the rice and cook for half hour more.
