Ingredients:


For dough:

1 lb semolina
1 tsp salt

For the stuffing:

1 lb ground beef
2 chopped onions
3 garlic clovers
½ tsp salt
½ tsp black pepper
3 tbsp olive oil

For the soup:

3 beets cut to cubes
1 tbsp tomato paste
1 tbsp sugar
1 tsp salt
½ tsp lemon salt


Directions:


Dough:
Sift the semolina into a large bowl
Add the salt and mix
Add water just about to cover the mix and let it sit to absorb the water
Start kneeding the dough until smooth, add small amounts of water if needed until smooth dough achieved
Put the dough aside

Stuffing:
In a pot fry the onion in the oil until golden
Put aside half of the fried onion for the soup
Add the ground beef and the rest of the ingredients to the pot and cook while mixing until the beef is done
Make dough balls about 2 inches diameter, make a whole in the ball, stuff it with stuffing and close it
Make the rest of the balls and put them aside

Soup:
Use the fried onion that you spared
Add all soup ingredients and cook until the beets are half cooked
Carefully drop the Kubeh balls into soup and cook for 30 minute
