1 pound basmati rice
½ pound green/brown lentils
4 chopped large onions
5 tbsp olive oil
1 tsp ground cumin
Salt
Pepper
1 cup roasted pine nuts
Directions:
Soak the rice in hot water for at least 2 hours and drain
Boil the lentil with 3 cups of water and cook for half hour, drain and keep the water as well
In a pot, fry the onion until golden
Remove ¼ of the fried onion and set aside
Add the lentil to pot and fry for 3 minutes
Add the cumin, salt and pepper
Add the rice and mix gently
Add 1 cup of the lentil drained water and 3 cups of water
Cover the pot with 4 layers of paper towel and top it with the pot cover (to absorb the steam)
Cook for half hour in low heat
Turn off the heat and let it sit for 15 minutes
Serve with pine nuts and the fried onion sprinkled over.
