Ingredients:


1. 10-12 Medium Potatoes
2. 3-4 Lemons
3. 1-2 Garlic Cloves
4. Olive Oil "ELEA"
5. Oregano
6. Pepper and Salt


Directions:


1. Pre-heat the oven to 375°F.
2. Wash and cut the potatoes into quarters lengthwise.
3. Place into a large, deep ovenproof baking dish.
4. Drizzle with olive oil.
5. Squeeze the lemons and remove the zest from 1 or 2, crush the garlic and chop the oregano.
6. Season the potatoes well and scatter with the oregano and lemon zest.
7. Bake uncovered for about 30-40 minutes or until tender.
8. If wished they can be placed under a very hot grill for a few minutes to brown.
9. Serve with a squeeze of lemon juice.
