1 jar or can of pitted green olives
1 tbsp paprika
4 tbsp olive oil
1 can crushed tomato
10 sliced garlic clovers
2 crushed celery sticks
1 tsp ground cumin
1 tbsp sugar
1/2 lemon pealed (peal yellow skin and cut to cubes)
Hot pepper according to taste
Parsley and cilantro for decoration
Drain the olives and soak in boiling water for 10 minutes.
Wash the olives and soak in cold water for 30 minutes.
In a pot mix the following: crushed tomato, lemon, paprika, cumin, garlic and hot pepper.
Cover the pot and cook in low heat for 30 minutes.
Drain the olives, add to pot and cook in low heat for 1 hour.
It can be served hot or cold decorated with parsley and cilantro.
