Ingredients:


2 lb ground beef
5 eggplants
4 chopped onions
4 chopped tomatoes
1 tbsp paprika
½ cup chopped parsley
2 tbsp flour
2 eggs
1 tbsp salt
1 tsp black pepper
Frying oil


Directions:


Preheat oven to 350F
Peel the eggplants
Slice alongside, half inch thick
Sprinkle salt on both sides of the slices and let rest for half hour
Wipe the liquids from the slices
Fry the slices to brown, remove and set on paper towel to absorb extra oil
Fry the onion until golden
Mix in the beef, the tomatoes, the parsley and spices and cook for 15 minutes
Use an oven pan with high walls
Lay at the bottom one layer of eggplant slices
Now make a layer of the beef and cover with another layer of eggplant slices
Beat the eggs with the flour and pour over the top evenly
Bake for about an hour
