Ingredients:


6 large onions
1 cup rice
2 chopped tomatoes
1 cup chopped mint leaves
1 cup chopped celery (leaves only)
1/4 tsp lemon salt
1/2 tsp salt
1/2 tsp black pepper
Soup mix
1 tbsp paprika
Juice from 1 lemon


Directions:


Peel the onions and cut only half way through center (in the fibers direction) so it will be easy to separate the layers.
Boil the onions until cooked but not too soft.
Drain the onions and put them aside to cool off.
In a large bowl mix the rice, the tomatoes, the mint, the lemon juice, the lemon salt and the salt.
Peel the onion layers carefully not to break them.
Stuff each layer with the mix and roll it to close.
Lay each stuffed layers at the bottom of a large pot. You may have several layers if needed.
Mix the paprika and the lemon juice and poor over the stuffed glides just about to cover them.
Bring to boil, cook for 15 minutes and then lower the heat to minimum and cook for at least an hour.
You may also cook it in oven in 200 degree F for a few hours.

Can be served hot or cold as a side dish or as a snack.
