2 cups basmati rice
1 chopped onion
½ pound ground lamb
2 chopped red peppers
½ cup raisins
½ cup sliced roasted almonds
½ cup roasted pine nuts
1 cup chopped cilantro
1 cup chopped parsley
½ tsp ground clover
1 tbsp ground nutmeg
½ tsp ground cinnamon
1 tsp turmeric
1 tsp ground cumin
1 tbsp paprika
4 tbsp olive oil
1 tsp salt
4 cups water
Directions:
In a pot fry the onion with the olive oil
When onion turns transparent add the lamb and the red pepper, stir and fry until light brown
Add the rice and the salt and mix
Mix the water with the spices in a separate pot, bring to boil and then pour over the lamb in the other pot
Cover and cook for 15 minutes, turn off heat and let it sit for 10 minutes
Serve with a sprinkle of cilantro, parsley, pine nuts and raisins.
