* ¾ cup cornflake crumbs
* 2 eggs (graded large)
* ¾ cup milk
* ½ teaspoon vanilla extract
* 6 slice4s day-old bread, cut into halved diagonally
* ½ stick (¼ cup) unsalted butter or margarine, melted
* Grease for the baking dish
Directions:
Preheat the oven to 450 degrees F.
Into a shallow dish, measure the cornflake crumbs. In a second shallow dish or pan, beat the eggs until foamy. Stir in the milk and the vanilla. Dip the bread into the egg mixture, turning once. Allow time for the bread to absorb the liquid. Then dip the bread into the crumbs, coating evenly.
Arrange the slices on a well-greased baking sheet. Dribble with melted butte or margarine. Bake for about 10 minutes, until lightly browned. Serve with warm maple syrup, jelly, honey, cinnamon, or the topping of your choice.
