4 pound chicken thighs or a whole chicken cut to pieces
2 onions cut to 8 each
3 potatoes cut to 4 each
6 minced garlic cloves
1 tsp ground cardamom
2 tbsp fine ground coffee
½ cup olive oil
Salt
Pepper
Directions:
Spice the chicken:
In a large bowl mix the chicken with garlic, cardamom, salt and pepper, cover and set aside
Prepare coffee sauce:
In a sauce pan bring to boil 2 cups of water
Add the coffee stir and cook in low heat for 2 minutes
Remove from heat and set aside for the sediment to sink
Pour the coffee liquid over the chicken, mix well and set aside for 10 minutes
Heat oven to 375 deg F
Move the chicken to a large pan or pot, pour the oil over the chicken, add the onion and the potato and mix
Cover with aluminum foil and perforate it to let the steam out
Bake for hour and a half, remove aluminum foil and bake additional half hour
