Ingredients:


• 6 eggs
• 16 oz white cheese (such as Mascarpone or even cottage cheese)
• 8 oz cream cheese
• 8 oz sour cream
• A cup and a quarter of white sugar
• 4 tablespoons of cornstarch
• 3 tablespoons of vanilla pudding powder
• 1 tsp vanilla extract


Directions:


Heat oven to 400 deg F
Fill a tray with boiling water and place it at most lower oven shelf
Move the upper oven shelf just above the water tray
Separate the eggs yokes and whites (the egg white should be very clean from dirt or even drops of yoke)
Move the white to a mixer ball
Add ¾ of the sugar to the egg whites
Using the whisk tool, mix at highest speed till a firm whip is achieved and move it to a bowl
Put the egg yokes and the rest of the sugar in the mixer bowl and mix a for a minute
Add all other ingredients to the mixer bowl and mix at slow speed moving gradually to medium speed till and smooth paste is achieved
Remove the bowl from mixer
Add 1/3 of the whip to the mix and mix it well using a large spoon
Add the rest of the whip and this time mix it slowly to keep the mix fluffy
Spray the bottom and the walls of a cake pan 10 inch diameter with oil spray
(You may cover the bottom and the walls with baking sheet and then oil it, to make it easier to remove the cake when ready)
Poor the mix into the baking pan and flatten the surface to make it even
Bake 20 minutes at 400 deg or till the cake is light brown
Lower heat to 300 deg and bake another 30 minutes ( make sure the surface is not too dark)
Turn off over and leave the cake ib the over for 1 hour
Remove cake from oven and cool it in refrigerator before serving
