1 head of Romaine or iceberg lettuce (check for infestation)

4 green onions (check for infestation)

1 medium onion (check for infestation)

2 green peppers

1 red pepper
*
1 English cucumber, peeled

8 firm, ripe tomatoes (recommend Israeli)

4 Tbs. extra virgin olive oil "ELEA Olive Oil"
*
4 Tbs. fresh lemon juice
*
1 tsp. salt (adjust to taste)
*
Freshly ground pepper, optional (check for infestation)
Directions:
1.
Wash and dry vegetables well.
2.
Dice them neatly into 1/2-inch pieces and combine in a large bowl.
3.
Sprinkle with olive oil and lemon juice.
4.
Add seasonings; mix again.
5.
Adjust seasonings to taste.
YIELDS: 8 servings.
CHEFS NOTE: Drain off excess liquid in the bottom of the bowl before serving.
