2 cups brown rice
2 chopped scallions
4 chopped garlic cloves
½ cup chopped parsley
1 cucumber cut to cubes
1 tomato cut to cubes
Chopped jalapeno pepper to taste
3 tbsp chopped mint leaves
Juice from 1 fresh lemon
5 tbsp olive oil
Salt
Pepper
Directions:
Soak the rice for 2 hours
Boil in water until soft but not too soft
Set aside to cool down
In a large bowl mix all ingredients and refrigerate
