1 pound flour
1 pack of dry yeast
1 tbsp sugar
1 tsp salt
2 tbsp olive oil
Directions:
Prepare yeast starter:
In a bowl mix the yeast, the sugar, 1 tbsp flour and half cup of warm water and set aside until foam created on top
In a mixer bowl add the flour, the salt, the yeast starter and the olive oil and start mixing in medium speed while adding water a bit at a time until smooth and non sticky dough in achieved.
If you prefer kneading by hand you have to do it for long enough to achieve the same result.
Cover the bowl with plastic bag and let it sit for 20 minutes
Mix again for 5 minutes
Grease the dough ball with a bit oil on the surface, put it back in the bowl, cover with a towel and let it sit until it doubles in volume.
Create balls about 2 inches diameter and then flatten with dough roller to achieve a pita of around 6 inches in diameter
Heat oven to maximum (550 deg F) while the pan is in the oven
Open the oven, pull the tray carefully and put as many pitas as it fits, slide back in
Check from time to time and when they just start to turn yellow, remove from oven
