Stuffing ingredients:
1 whole chicken
½ pound ground beef
2 large onions chopped and fried
2 tablespoons bread crumbs
2 eggs
Black pepper
Salt
½ tsp ground cumin
½ tsp cinnamon
Sauce ingredients:
1 large onion, chopped
A small box of mushrooms (canned) well drained
1 large carrot coarsely grated
2 celery stalks chopped
10 dried apricots chopped
1 oz seedless raisins
1/2 cup white wine
1/2 cup water
Black pepper
Salt
1/2 tsp cumin
1 tsp grated ginger
1 tsp honey
Directions:
Mix all stuffing ingredients and stuff the chicken.
Close the chicken using either tooth pics or sawing the skin.
Put the chicken in a pot.
Preparing the sauce:
Fry the onion until golden, add the mushrooms and fry for about 5 minutes more, then add the remaining ingredients and cook about 5 minutes more.
Pour the sauce over the chicken and cover the pot with aluminum foil.
Preheat oven to 375 deg, F and cook the chicken for about an hour.
Remove the foil and continue to cook until all liquid evaporates, while from time to time pour the sauce from the bottom over the chicken until the sauce is almost gone.
