4 small eggplants
1 onion
2 pound beef cubes
1/2 tsp cumin
1/2 tsp turmeric
1/4 tsp black pepper
1/4 tsp salt
Small can of tomato paste
4 dry lemons (or juice from 1 large lemon)
Directions:
Fry 4 small eggplants (if large cut to quarters) until brown
Chop the onion and fry to golden
Fry the beef cubes shortly on all sides until light brown
In a large pot bring to boil a gallon of water.
Add the fried beef and onion and all spices and cook until the beef is well cooked
Add the fried eggplant
Add a small can of tomato paste
Add the lemon (or the lemon juice)
Cook for 15 minutes and serve
Can be served as a casserole or as an addition to rice.
