1lb basmati rice
2 cups of fresh fine chopped dill
1lb fresh or frozen peeled fava beans
1 tsp salt
½ cup olive oil
1 large potato or 2 medium size, peeled and sliced ½ inch thick
Directions:
Soak the rice for an hour
In the meantime prepare the dill and potato
Drain the rice
In a non stick pot, boil ½ gallons of water with the salt
Add the rice, mix well and let it boil till the rice is half cooked
Drain the rice
In a wide pot heat the oil and move it to the cup
Ly the potato slices at the bottom of the pot and let them fry for 5 minutes
Mix the rice with the dill and the fava beans and pour over the potato slices
Pour the oil over the rice evenly
Cover the pot with towel or paper towel (to absorb the steam)
Put a cover over the towel
Lower heat to medium low and cook for 30 minutes
Check the potato to be golden and keep cooking more if needed
When ready, remove cover and towel, put a large plate upside down to cover the pot and then turn the pot and plate upside down
The result should be a nice cake shape with golden potato on top
