½ cup burghul (crushed wheat)
1 tomatoes cut into small cubes
½ cup chopped mint
½ cup chopped parsley
½ cup lemon juice from fresh lemons
4 tbsp olive oil
1 tsp salt
Directions:
Wash the burghul, drain and soak in ½ cup hot water for 20 minutes until all water is absorbed.
Mix with all other ingredients and serve.
